Any Home Bakers Here?

Will these be the same kind of quail you have now or are you branching out and trying a new breed?

They're the same breed. There are some colors that can be feather sexed and some can't. This new batch will be but not all of my current birds are. Vent sexing isn't my thing.

So, a few weeks ago, I was issued a challenge to make a quail saddle. I finally finished making my stockpile of the other saddle sizes and decided to accept this challenge. The quail girls that I tried it on were not thrilled with it. It will need more work if It's going to become a thing. The girl that is currently wearing it seems to be getting used to it, slowly, but it needs a little tweaking.

I took it a step further and decided to attempt a serama saddle too. Holly is a little on the big side for a serama but I think another half inch on each side and it should be perfect :)

Quadruple Chocolate Pecan Cookies:

Melt in double boiler:

16oz. 72% dark chocolate (I use Trader Joe's pound plus bar)

cream together:

12 Tbsp. salted sweet cream butter
2/3 cup cane sugar (5 oz.)

Add and beat for approximately 2 minuets:

4 medium eggs
2 tsp. vanilla extract

In separate bowl mix together:

1/4 cup plus 1 Tbsp. flour. (I use tapioca flour for grain free recipe)
1/4 cup plus 1 Tbsp. Droste Dutch cocoa
1/2 tsp. baking soda

Add melted chocolate to wet ingredient bowl and mix.
Then add dry ingredients to wet ingredient bowl.

Add 6 oz. vanilla milk chips (for best flavor must contain cocoa butter)
Add 6 oz. semi-sweet, bittersweet, or milk chocolate chips
Add 1&1/2 cups toasted pecans, crushed or whole depending on preference.

Place about 2" apart on parchment paper lined baking sheet. Bake in preheated 350F oven for 10-11 minuets. Do not bake any longer. Once out of oven let stay on baking sheet for around 5 minuets. Slide parchment paper with cookies off baking sheet and cool completely on parchment paper.

Make coffee.

They look so cute in their little aprons...good job!
