What’s the reason for the vinegar?TO POACH AN EGG Put about 1/2 inch of water in a frying pan. Add 1 teaspoon of white vinegar and bring to a simmer - do not let the water come to a boil. Crack the egg into a small bowl. lower the bowl to just above the water level and tip the egg into the simmering water. Cover and cook for 4 minutes - do not let the water boil. I turn the heat down to the lowest setting after adding the eggs.
