Grandmas Potato Salad

8 good sized potato's Russet preferred Boiled and cut bite size
1 dozen large eggs hard boiled chopped
2 Sweet onion diced
3 Basil leaves diced
3 sprigs dill chopped
1/2 cup Olives black or green chopped
1/4 cup dill relish
3/4 cup Mayonnaise
1/2 cup dry mustard
1/4 cup of Vinegar
Mix until all is covered the dry mustard get warmer as time goes by
I add Cholula to most things use all for Deviled eggs also

The ham is still cooking. I'm so tempted to open it up and see how it's looking, but I'm restraining myself because I want it to be a surprise when it's done.

)The cheese seems a bit high. It is ounces and not pounds?I knew I had a recipe for leftover ham, but couldn’t remember what it was until now. Cinco de Mayo is coming up, and that is how I remembered the ham breakfast casserole.
The night before, spray a 13x9 pan.
I don’t measure anything, so do what works for you.
6 eggs (or a dozen)
Two splashes of milk
A little to a lot of ham
15 pounds of cheese
Green chiles
Salt and pepper
Whip up your eggs and milk.
Lay tortillas along the bottom of the pan.
Add a layer of ham and cheese, plus some chiles if you are using.
Add another layer of tortillas.
More ham, cheese and chiles.
Add another layer of tortillas. This layer should cover side to side. Tear a few tortillas in strips to get it done.
Pour on the eggs, and sprinkle on the salt, pepper and a good layer of cheese. Cover with foil, and refrigerate overnight.
Preheat the oven to 350°
With the foil still on, bake for about 45 minutes. Remove the foil, and bake for another 15 minutes.
I forgot the 1 pound of string cheese DH bought for Bloody Mary's and the 8 oz port wine spread cheese.
