They look great - just like store bought (but I'm sure better)!

Also, that reminds me - I should make a batch of gingersnaps myself. I will need some for the pumpkin cheesecake, cause I always make a gingersnap crust rather than graham cracker.

Yes I’ll make them again! Next time I’ll add more cayenne. They’re harder than the hubs of hell so they would mail well!
That's why I want to succeed at making the thin ones. They are crispy, but not hard, because they are so thin. I can make them fairly thin, but when they are about 1/16" thin after baking, they melt in your mouth. I've tried rolling and slicing, and about every recipe out there. The fairy ginger bread is closest, but not the same.
 
I swear to tell you that the dog woke up this morning, immediately got in my face, and asked, “Got anymore cookies?! Huh? Huh? Huh? Huh? Do ya? Do ya? Mom? Mom? Mom, I want cookies.”
So I’m making more oatmeal raisin cookies for the dog.

Makes sense to me :lol:
