Beautiful bread!

Anybody have a bread recipe I can mix tonight and leave until tomorrow evening to bake (prep and then bake 24hrs later)? I've been stuck in my home office all day and cannot get into the kitchen to mix dough and bake during the day. I'm also not wanting to wake up at 5am to make bread and I don't have a bread machine that can do it all for me. I do have a Kitchenaid mixer if your recipe calls for it though.

Also, has anybody baked bread in one of these:

I have an old Le Creuset clay baker similar to this. It's oblong and wider than a bread loaf. It fits a chicken or duck. I've been tempted to bake bread in it though. My MIL handed it down to us, and she swears it can bake quality bread, but she doesn't have any recipes to share.

I don't have one of those but they're supposed to be great for baking bread in!

The recipe @rjohns39 gave you the link to is my husband's favorite! I like it because it's easy to prep, bake when you're ready and you can make 3-4 loaves from that one batch of dough.

Try this and let me know if it is any good!

Romertopf clay baker bread recipe

1 Cup plus 2TBL Water
1\2 TBL olive oil
3 TBL sugar
11\2 tsp Salt
11/2 TBL PWD Milk
2 cups white flour
1/3 cup whole wheat flour
2Tsp yeast

Knead dough until elastic, about 5 minutes. Cover in a bowl for an hour. Grease a second bowl and knead dough to distribute yeastβ€”video said 14 minutes, but it looked like less time than that. Let rise in covered bowl for 30 minutes.

Place clay baker into cold oven and heat to 475. After the 30-minute rise, add dough to warmed baker bottom. Cover and cook 20 minutes in oven. Remove lid and check crust color. Bake longer to get the color that you want.

Let rest 30 minutes before slicing

@BReeder! or anyone else that likes to mix dough one day and bake later, this is a good book for that:

Bread Book.JPG

All of his recipes are made like that and he explains why, along with a lot of other information about bread baking and a big assortment of recipes. This book was really helpful to me when I first started baking bread.

Don't you hate it when your bike breaks down?

The tube popped, slipped out, and wrapped around the axle. A tough fix.
Ugh! I just passed up a free tube that guarantees not to pop. I managed to become a Walmart reviewer, and that was one of the freebies.
