Any Home Bakers Here?

King Arthur sent out a notice to their customers that they have recently sent out a huge order of flour to retailers and are filling delayed customer orders. I wound up having to accept a 5 lb bag of generic bleached AP flour (ugh) b/c I had used the last of my KA flour.
A baker has to do what a baker has to do to keep that starter fed! Will be glad to finally be able to get the good stuff again.

I am still looking for dark rye flour. Hopefully the stores will get some soon
 
Penny google whole wheat and blood sugar before you make bread you don’t care for. I have blood sugar issues too and I read somewhere that whole wheat spiked blood sugar faster than white bread. I think you’re already ahead of the game doing sourdough. But you can check it out and decide. It doesn’t make sense that it would, and there are other reasons to use whole wheat I suppose. I don’t much care for it either, haha!😂
I would suspect if you read the study, they were using commercial bread products and not home made bread products. There are a lot of bad things in most commercial whole grain baked goods.

The important thing for diabetics is increasing fiber in the diet and it you use real whole wheat bread without a lot of sugar, it will be good for a diabetic

I’m going to have to find the source. I don’t want to be one of those “studies show” people, haha!

I know!

It can be so hard to figure out what a study is all about when news stories can give the study a result it did not have.
 
Today I made bread.
I made a sourdough round loaf this morning that is now resting until tomorrow. (Never used a starter before but it's rising)
I made banana bread to use up ripe bananas. Half of it has disappeared... 🤔
And I've made a no yeast round bread for supper.

That's a full day of baking...good job!
