I left my sourdough too long so it sank, sad flat crispy bread ugh it doesn't taste very nice either :tongue. So I've made a loaf using dry yeast to have with soup at lunch time. I'll try again another time with the sourdough before deciding if I should keep wasting flour...
It is a challenge and do not give up. Use a little yeast in the beginning.
1/4 tsp or 1/2 tsp and maybe 1 teaspoon???? That is what I did when
I started. And there are a lot of recipes that do suggest using yeast.
RON, may have some suggestions to help. He guided me and it worked. The Bread is better to digest and tastes GREAT. Aria

Try using some yeast 1/4 tsp, or 1/2 tsp or 1 tsp....that is what I did
when I first started with Sourdough. Ron gave me some suggestions
and it worked. I am sure you will try again. Sourdough is healthy and
has a NICE taste. I am sure Ron can give you some input and you can
try again. Aria

I've actually already started another using the same recipe. I plan to put it in the oven before bed and leave it to cool over night.

I'm proud of this loaf though 👌. We ate the lot with a bowl of soup. Just enough bread for 5.

First Time Sourdough Loaf....LOOKS FIT TO EAT. Needs little....those
ROUND loaves ...are not easy to RISE. I think they need stretch,
fold and turn. YOU are doing FINE. Aria

Sourdough can be a bit un predictable!

Keep working with it and it will get much better

Be very very careful with what you hear in the news and always verify with the CDC.
I have read about some vaccine trials that are moving into second stages but still are about a year out from having one ready and that will only be if the vaccine makes us immune
