Any Home Bakers Here?

Been baking my fool head off bought these individual bundt pants off Amazon. Had to try them right, crisco on them popped em right out after cooling.
The three cupcakes where sprayed good so will come out also devils food cake

I started the bread last night at 9pm and then started using a stretch and fold kneading process-- every 20 minutes from 6 to 8:30. At 8:30AM I shaped and put it into a banneton. At 8:45AM I warmed up a porcelain dutch oven to 450F(start in a cold oven) until 9:45 am when I slashed the bread with a razor and put the bread into the dutch oven.

I did use white rice flour for dusting the basket. The dough was moved from the basket to parchment paper, slashed and then moved to the dutch oven. Lid goes on for 20 minutes and then the bread is moved to a cold cookie sheet(keeps the bottom for burning) and then back into the oven to crisp. Today it was for 7 more minutes. If you want the bread darker, crisp for 10 or 12 minutes
 
I braved the heat and smoke from the fires today and bake bread!

It is the Champlain sourdough bread large version in the google doc linked to in the first post of this thread.

I got a good rise on this one for sure!

@NFC, it was your pizza dough recipe. My family has grown to love it. I find that it works a little better if I preheat the oven with the pizza stone inside it, and then when it reaches 450, I put the pizza dough on the stone, and then put the toppings on and stuff then pop it in the oven for 15 minutes. Perfect crust!

Anyway, I just got out of a doctors appointment, I’m being put on a new med. Here’s hoping it helps out a little bit.
