Be careful if you use a Mandolin...I lost a big slice of my thumb to one of those using it at work.

I wear a cut resistant glove when using the mandolin and try to be careful. But the glove works well if I get sloppy.Lost a good chunck of one finger on mine also Please me careful

It there is a second rise before baking, Kneading a bit to move the yeast around will help with the rise. You do not have to be too aggressive with the kneading and a bit of air bubbles is not terrible. The goal is not to remove all of the bubblesGood morning everyone.
I'm making a malt and spelt loaf . Do I knock the air out after an hour or so? The same as white.

We are fine here with ok air quality-- about 159 at the closes sensor
