Any Home Bakers Here?

Well crud, the espresso powder will be here today but my cocoa has been delayed a week. I’ll make scones with regular cocoa tomorrow and we’ll have to taste test some with the Dutch cocoa after it gets here. Oh darn!

@ronott1 What is the rule of thumb for using sourdough starter, freshly fed? Or when the activity is at its peak and it hasn’t deflated yet? I thought at the peak of activity. If I don’t want to add yeast to my dough is that still true?

Thank goodness.....I do not have sleep-less nights too often. If and when I do....I get up warm milk, honey and 2 graham crackers....read little...and then back to bed...and I do fall asleep. NEVER try to accomplish chores...does not work. A Doctor friend told me this...MANY YEARS AGO.

I don’t have them often these days but just couldn’t fall asleep and kept thinking about the bread. I won’t do that again for sure. At least it didn’t make a mess in the oven so there’s a silver lining.
 
Well I couldn’t sleep Thursday night so I mixed the dough for the baguette and left it in the oven with the light on. I was disappointed in the morning when it was a mess. The dough spread out rather than up so I think it was too wet. 😥 I’m feeding Scooby daily though and will try again tomorrow morning. Does anyone else think the weekends should be five days and the work week only two days?
The dough does need to have enough flour to hold structure in it is not supported by sides of a pan or etc

Freshly fed works faster so will have less sour taste. It will still work though.

Anyone willing to share a good sweet potatoe casserole recipe for Thanksgiving?
for a sweet side dish: slice or cube sweet potatoes. Toss with can of chunk pineapple and juice --1 or 2 cans depending on size of dish, sprinkle with 1 tbl. pumpkin pie spice and 1/4 cup brown sugar. mix and put into greased dish. top with your favorite crumble--we like chopped walnuts or pecans with 1 cup flour, 1/2 cup sugar, and i stick softened butter---for a 9x13 dish. bake 350 for 1 hour serve warm or room temp

Thanks for this ....sounds DELICIOUS. Floyd does not like sweet potatoes..but I think he would like this. He loves SWEETS. Aria

Thank you, no pans so I’ve left to rise on a cookie sheet. Now that I’ve thought it over and read the recipe again I think I left it to sit too long and maybe a bit too moist. I’ll have to work on it.
 
New attempt at a good baguette. I looked at the starter and it was was nice and fluffy so I decided to give it a go.
