Any Home Bakers Here?

OK, I don't know what I did right but the Champlain bread worked this time!

I made Ron's "large loaf" but as always swapped in 50% whole wheat. And of course it has some of Bob's spelt flour (thanks again Bob!). I did forget to score it and people wanted it hot so the texture isn't quite right but it still tastes good. I guess I need to make individual rolls or something.

One change, I have the spiral baskets now so that helped get the shape as it was rising. And it seems like the mix was a bit less damp this time. I got the starter out of the refrigerator earlier in the day yesterday and fed it. I mixed the ingredients about 10 PM then re-fed the starter and left it out overnight because I needed to make the KA Basic sourdough loaf or today's sandwich would have been shy one ingredient.
It is coming along nicely! Did you use white rice flour in the basket?

I have a request for whoever is in charge of the recipes.

Please remove my roast duck and goose recipe. The one that you have to cook at 355 and do mathematics. The reason I ask this is because I was proven wrong about the cook time by a friend of mine. In fact, the internal temp by my method does not reach a safe temperature. I just recently discovered that.

I don’t want anyone getting sick by my recipe, so please remove it.

I will make an updated recipe with the correct cooking instructions.

Mever had em that way. But omg i am for sure gonna try it! I love dates. I florida i could buy fresh dates in a market i went to. And i miss that a lot. These are butter, sugar, chopped dates all cooked. Then add crushed rice crispies. Make balls while still hot and roll in powdered sugar.
My Aunt made those when I was little. I love, love, love those. One of my favorite holiday recipes
