Any Home Bakers Here?

I made my husband his favorite dessert, lemon meringue pie. I get whatever lemon/meringue won't fit in the pan, since I can't have the crust.

I have a lemon meringue pie question. I am using my MIL's recipe, which always worked for her. Mine turns into lemon soup pie. Tasty, but a mess.

This last time, after the pie was made, I read online that the meringue has to go on the filling right away, while the filling is hot, or the lemon turns watery which is my exact problem. Does anyone here know anything about this working? I made the pie one year when my MIL was visiting... soup. If she knew why, she wasn't saying. She just laughed.
