Folding is fun for sure!I used whole wheat in place of the spelt and rye. It was fun to weigh all the ingredients! Yeah I don’t get out much,
Thank you Ron for the tip! I’ve noticed that adding whole wheat to a recipe makes it drier. Fwiw it was also fun to do the folds! It was helpful to see what the dough looked like from the video. Mine may not look quite as silky but I did notice the different feel this recipe has compared to my other tries.
The first thing I used the air fryer for. The doughnuts are okay, but I’ll use them as burger buns. I can smother them in sugary frosting or dip them in melted butter, and dust them with cinnamon sugar, but I may as well deep fry them if I’m doing that.

Nice looking bread!Here is my first attempt at Champlain bread. Instructions from the Benetton basket says it takes a couple two or three bakes till the basket is seasoned. It came out pretty deformed but puffed up better than any I’ve done so far. Still couldn’t slash worth a tinker’s dam , Brand new lame with brand new blade.
