Any Home Bakers Here?

Tried something new today...I took 2 different breakfast cookie recipes and combined parts of both to make my own version. They turned out well and will be fun to play around making with different ingredients.

Breakfast Cookies
(makes 12)

2 to 2 1/2 Cups oats
2 ripe, mashed bananas
1 Cup peanut butter
1/4 teaspoon salt
1/4 Cup honey or real maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 1/2 Cup mix ins (dried fruit, nuts, seeds, coconut, chocolate chips, etc.)

* Heat oven to 325*
* Combine all ingredients in a large bowl, mix well
* Using a 1/4 Cup measuring cup, scoop dough onto lined baking sheet (about 6 per sheet). Gently press dough down as these cookies do not spread.
* Bake 17-20 minutes (until edges are lightly browned)
* Cook on baking sheet 5 minutes then transfer to cooling rack
* Store at room temp up to 5 days or in fridge up to 10 days

The ones I made today had dried cherries, coconut and pepitas in them...yum!

The variance in the oat measure is due to what you put into the mix. If you substitute something like pumpkin puree for the banana, you might want to add the additional oats for the thicker batter. You can also substitute apple butter or maybe applesauce for the honey.
And could be used as a snack at work. Thanks for the recipe.
 
hey, how are you feeling today?

I had my CT scan so it was a stressful day until we met with the doctor, everything is good and we go back in 6 months for another angiogram. So in regards to my stroke, we are looking good, but the fall another story. My wrist is really hurting, but thankfully the pain meds are working.

I'm so pleased you have a little help

The end of last year, i fell spilling coffee up my walls and really hurting my elbow, my dog just sat near me bless him until I could get back up. It's not an injury where it can be fixed so have to be careful not to lean on it. My knee and ankles can stick at times I try to exercise my ankles and feet, nothing can be done for my knees or anywhere on my body, so i just keep plodding on regardless hoping I can last out :)

I always use my cane or walker, I am never walking without some type of support.

@N F C Question for you regarding the breakfast cookies - could I substitute pumpkin puree for the peanut butter? or maybe something else ...

I don't really like peanut butter so much. Sad to admit, but I threw away 1/2 a gallon bag of Puppy Chow that a friend gave me at Christmas time because of the peanut butter in it. :oops: I did eat some of it, but only about 1 1/2 cups over a 2 week period. DH wouldn't even try it ...

You could try the pumpkin puree and see how they turn out. Might be a nice switch up to the recipe!
