I made blueberry banana bread this week. I have been dehydrating the old ones lately too.

They are very good!

I am in the process of trying to get my mothers awesome scalloped potato recipe.

I think that might be pretty good with a little coconut in it.

I love putting some coconut in them, it gives them some chewiness. Since the recipe calls for 1 1/2 cups of add ins, I do 1/2 cup coconut, 1/2 cup some sort of nut (or seed like pepitas) and 1/2 cup of dried fruit. Works out well for us.

It was a little disappointing. We ended up adding noodles which helped.
