I'm using Namaste brand GF flour. I don't want to "mix" my own GF flours to come up with the perfect flour; too many variables. This brand works well, the machine is.... ok. It is supposed to have a GF cycle, but it does a "mix" in between two rises. Which is why the GF recipe included was a total flop, I think. So I use my own recipe, run the dough cycle, then the bake cycle.
I was very peeved that there was a second mix. This was a $65 machine, not a $300 machine. But it shouldn't be advertised as a GF machine, IMO.
