Any Home Bakers Here?

My friend has gluten problems. I would like to know how this cake turns out and a recipe for bread would be good to. :)
It's in the oven right now, so I guess I'll have to do a taste test ;) I used this recipe:

It's a family favorite! The substitutions I made:
-120 g vanilla full fat yogurt instead of 120 g sour cream
-1 c full fat lactose free milk (all I had on hand, I'm LI) in place of 1 c reg milk
-270 g BRM 1:1 GF flour instad of 270 g cake flour

Banana Nut Muffins by Aria
2 1/4 cups oat bran cereal(I use Bob's Red Hill)
1 tablespoon baking powder
1/4cup (brown sugar, or maple syrup
1/2 cup walnut or pecans
1 1/2 cup skim milk
2 cups mashed ripe bananas
2 beaten eggs
3 tablespoons canola or grape seed or avacado oil
1 teaspoon cinnamon
Mix dry ingredients Mix milk bananas eggs and oil ...mix together
Do NOT over mix...you can add: dried pineapple choc bits raisins
dried cranberries chia seeds cocoa powder PLUS add what you may have to add. endless dried fruits etc. REMBER DO NOT OVERMIX.
425 degree oven 15-17 minutes place in muffin tin makes 12 or
depending on size of tins. They are a weekly standby at our house.
Now that I am not able to bake...my sister who lives in Hamilton about45 minutes away bakes them for me. They are delicious and

I was given some rock hard sliced sourdough bread. I put it in a casserole dish, added the cinnamon, vanilla (or did I drink the vanilla?) egg and blueberries. I was going to add cream cheese, and still might in the morning. Anyway, it was all pretty and presentable, but I just had to play with it. :D I will be having blueberry French toast for breakfast, and I’m sure it’ll taste fine.

Thanks so much :) . I really wanted to make her a Christmas cake but didn't have a clue on how to bake one that was more like a rock.
