I’ve been reading up on keeping a smaller starter and building levains in smaller jars. I see the Weck’s come in a six-pack for $20 in something akin to a pint jar....
If you shop at Walmart you can find the square jars with the hinged top that are not too costly.
I found one based on Hungarian goulash that was a keeper. Another one I did today was lentils and kale, except by the time I finished substituting the ingredients I didn’t have with the ones I did, it kinda’ wasn’t the same recipe.
