I forgot to post a pic of the crumb in the first loaf of this new recipe I made! It’s a bit wet since I use a 100% rye starter but I’m very happy with it, considering that it’s a no knead bread.

I struggle very hard with this. HOW do you get such beautiful crumb? Mine is light and pleasant textured…. But I cannot for the life of me get pockets larger than a couple bb’s

no knead and wet dough will get the big pockest.

Personally I like smaller pockets since it is better for honey and Jam! :drool

I have absolutely no clue :lau I’ll post the recipe for the bread in a bit, maybe it’ll work for you? I struggled with getting a good open texture for months, and I think messing with the dough less definitely helps.
