ways to use the whey
Jared, what cheeses do you make that you can make ricotta from the whey? I thought I could do it with the whey from yogurt, but either the answer is no, or I didn't do it right.

I end up with about half a gallon of whey when I make yogurt, starting with a gallon of milk.

You are this thread's cheese guru now!

My book only has 3 whey cheese recipes. Ricotta, Mysost, and Ziergerkase. All the recipes have a few things in common.

First, each one uses about 2 gallons of FRESH whey.

Second, all of them except for one require a quarter cup of cider vinegar.

Third, each one involves heating the milk to 200°F.

Some of the recipes specifically say “Whey from making hard cheese,” so I don’t know if your yogurt whey will work.

I’ll have to try one of these three recipes and see what happens. I don’t have much experience making whey cheese myself.
