Any Home Bakers Here?

I have been making Friend Rice Dinner....I will be there to get some Rice. They are easy and quick for me since I still cannot stand too long. I use tons of veggies, shitaki mushrooms, brown rice and seasonings. Got the WOK as a gift and am making good use of it. I have thin steak I make another time and another time chicken. Sometimes I use thin noodles cut in 1 inches with meat and veggies.

Pretty pleased with my new clay baker! This is a loaf of NoKnead Sourdough bread. Mixed it up about 11:30 last night, did a couple of stretch-and-folds 15 minutes apart, and went to bed. Got up this morning, and it needed to rise a bit more. So about 10 am I did two more sets of stretch-and-folds, put the dough in the banneton and let it rise another hour. Preheated the oven and the baker at the same time for about half an hour. Baked the bread and I’m so happy with the slightly thinner, less chewy crust. I love sourdough bread….I just hate having to wrestle the crust for it!
 
I am with you. I usually quickly cover with my two linen napkins and leave them on until the loaf is cooled. This does help keep the crust soft.

IT IS A BEAUTIFUL LOAF. My emil henry clay baker is a bit smaller and I love it too.
Thanks! My baker is only 2 qt, but I didn’t want to invest in a more expensive one until I’d used it a couple of times to see how I like it. The rye bread I baked in it last week was every bit as nice, and I’ve also cooked a pork tenderloin with veggies in it. So I’m sold and wouldn’t turn down a 4 quart if Ken decides to spurge for me!

Well, at least we are getting water in this drought situation
One positive thing, at least.

Tomorrow I'll make a loaf of my GF machine bread to take to a friend on Wednesday. I knew she had some dietary issues, but didn't know she was GF. She doesn't bake, so bread is a rare treat, at about $6 a loaf at the store. :eek:

What is the purpose of the clay baker? Is it like using a Dutch oven, but it's bread size and shaped? I've never seen one before.
