Pumpkin Bread by Sally's Baking Addiction

It is BY FAR the best pumpkin bread I've ever tried, but I cannot get it bake properly! It's so moist that it takes close to 2 hours at 350, and that's with constant monitoring and foil tenting. If someone more bread experienced wants to take a crack at it, please message or tag me so I can learn how to improve the bake next time!

Thanks, @cavemanrich , I do have a thermometer like that. I will use it as you directed.

I use a lot of honey...I do not have bees ...but a friend who does and I buy it
from her. I put the jar in water and warm it to get back to smooth. Works great
...I always use HONEY to bake...and in all my BREADS.
I do, too, or always have. I can taste the difference when bread has been sweetened with sugar and don't care for it. However, I am going to have to learn to bake with Stevia.

I’ve also heard this, but based on the last couple microwaves I’ve had, I’m more worried about it shorting and starting a fire! :mad:

Not going to stop using it, but I’m sure to stay nearby. Very annoying, as we keep it clean as a whistle.
Wowzers! Are you careful not to put anything in your microwave containing metal?

Good point! Some pottery has metal in the paint\glaze that will spark on the microwave.
 
Yes, this can be very sneaky!

I will say it happened when someone was heating water in a glass pyrex measuring cup.
I had a mug once that looked fine at first, but after about 20 seconds, you could see a bit of a glow at the bottom.

I also had a mug that did not spark but got very hot on the outside even when the liquid in the cup was not that hot.

Both of those will wear out the magnetometer in the microwave.
 
We did this with crystalized honey too!

Microwaving is not good since the honey will get too hot.
Put the sealed jars of honey in a pot of water and bring the temperature up to 120⁰F. Leave them there until every crystal is dissolved. They will stay liquid for a long time as long as every crystal is dissolved.

Never heat honey above 160⁰F. It will change the composition of the sugars.
I usually just run it under hot tap water in the sink. Never microwave honey bottles! My sister got burned pretty bad that way, it splattered all over after it came out.

I place it in a deep small cooking vessel, place the honey jar in and add water,
and heat very carefully....you can see the honey becoming more liquid and ready
for use. Aria TOP OF STOVE ON A BURNER. NOT MICROWAVE.
