I made an attempt at brandied cherries today, but I broke one of my usual rules and tweaked the recipe before trying the unaltered version first. :oops: Six weeks before I can see if it worked…
I need some more explanation/understanding about your post.
Are you referring to canning your fruit in Brandy???:drool:drool:drool

Sure! Original recipe is here. I saw it and thought, ‘that looks fun, I could do that’ and I recently got a cherry pitter so I figured I’d try it out.

But I made some tweaks to the recipe. I didn’t have any brandy but I had some vodka I use for making extract so I substituted that, and tweaked a few other things. The ending ingredient list looks like this:

4 cups pitted black cherries
1 cup brown sugar
1 cup white sugar
1 cup water
1 cup vodka
1 t vanilla
1 t cinnamin

I added the cinnamin in with the sugar and vanilla. I ended up with two jars of cherries and a third of leftover syrup, hopefully they’ll work out or at least be really obvious if they go bad; it said it’s not supposed to be refrigerated and I’m not used to doing that for anything but dried herbs.
