Any Home Bakers Here?

Good evening, everyone.

I got some homemade Colby in the cheese press. I need to wake up at five in the morning to take it out. As you can probably guess, I miscalculated the time it took to make it.

Once it’s waxed, it’ll be about 2 to 3 months before it’s done aging.

I have to say, I’ve never had Colby before. This will be interesting.
Colby is my favorite! I didn't even know you could make it. I come from Cheesehead state of Wisconsin, so you'd think I'd know that. I can wait the 2-3 months for sure! I'm going to have to look it up but guessing I'd need a cheesepress?

Yes, you do need a cheese press. You also need a lot of other things, like mesophilic starter, rennet, cheese salt, that type of stuff.

I got the recipe from this book.

I’m trying an Escoffier recipe from Le Guide Culinaire today. It’s called Cotelettes de Saumon.

Not sure if it will be successful or not. I actually think I made a mistake in the sauce Bechamel.

We will learn if it was successful or not in a few hours.

I just realized I made an irreversible mistake in the recipe. It might still taste good. Regardless, I will have to try again the right way sometime.
