Any Home Bakers Here?

Recipe? I don't have any GF muffin recipes. We used to make muffins a lot, but not since I went GF.

Here it is! I used 2 cups of all-purpose gf flour instead of the 1/2 cup of almond flour. I also used Greek yogurt instead of the "regular" kind. Instead of paper cups, I buttered the pan very generously (I also use a stainless steel muffin tin, highly recommend over non-stick or aluminum) and that's what gave them the fantastic crust on the outside! Oh, and I used olive oil instead of a "neutral" oil since I don't like using vegetable/canola oils in my baking. Lastly, I went with the frozen blueberries and sprinkled regular granulated sugar on top before chilling.
They turned out super great! More dense than non-gf stuff but still a very nice size with beautiful tops, and I almost feel like they could use more than the one cup of blueberries for more flavor, but I couldn't stop eating them! I will 100% be making these again, possibly freezing some for quick b-fasts and snacks after the baby's born. My non-gf husband was also pitching suggestions for other fruit and berries in them, so I think he approves! Will try chunks of frozen strawberries and maybe subbing some yogurt with bananas. Husband also suggested raspberries or blackberries.
 
I finally got around to making 7-grain blueberry bread. Next time I will go ahead, and make muffins.

No fat, and low sugar. I am impressed it turned out well.
I am also finishing up making ricotta.

Did you use fresh berries?? I'm sure you already cut into it. Lets see the side view of how the berries sank, if placed on surface.
Muffins are handy,,,,,, because you don't need to search for a knife each time you want a portion :old

These here did not sink all that much.
