My baking today was a 3rd attempt to make GF zucchini bread with almond flour and using honey in place of sugar. I was moving the pan out of hubby's way and dropped pan and bread on the tile floor. Luckily, the glass pan did NOT break. The loaf fell apart, but most of it stayed in the pan. It will not be sliceable. It's going to be a "spoonable" bread.

The center of the loaf is still a bit gooey, though it tested done with a toothpick. I'm not sure I'm going to try to do this again. I've used more flour, baked it longer, and it's still a bit too moist in the middle.

When using almond flour you need to cut the oil by 1/3 to 1/2, almonds are oily, if you dont it will never set properly. Using honey instead of sugar also means you need to decrease liquid, I usually cut down the milk by how much honey, or add as much extra flour. Also honey is 2x sweeter than sugar, so you don't need as much.

Tomorrow I have to make banana bread because the bananas I bought 2 days ago are all getting over ripe at the same time! They were all on the green side when I bought them. I will probably put some of them in the freezer. Pa has requested Pound cake to go with the fresh strawberries I bought. So I will be in the kitchen tomorrow.

Nice! Banana bread is the favorite around here. I have healthy, VERY healthy, and basically cake versions. Lol

Cranberry orange muffins are out of the oven. Kitchen smells wonderful.

Thank you! I knew about cutting the liquid when using honey (I did that), but I didn't know that about almond flour. The recipe was written for almond flour, but I think I'll cut down on the oil if I make it again.

Well I did not get the banana bread made but did make pound cake. To much chicken drama today to do much baking. We lost one of the older pet roosters to an unknown illness. Sammy had been sickly his whole life. He had splay legs as a chick so I fixed his legs and he bonded to me. He and 2 buddies were allowed to live in a small coop near our porch and became known as the Porch Pirates. Sammy was the smallest, Buddy in the middle and Hector the biggest. We let them free range during the day all last summer. Hector started to get aggressive so we put he and Buddy into a small rooster coop and Sammy in with a few small hens. Sammy would come to me everyday to see if I had treats and allowed me to pick him up and get cuddles. I noticed Thursday afternoon that he wasn't acting right so I brought him into the infirmary for special treatment. He was dead this morning when I went to check on him. I have to admit I cried like he was my baby.

I have baked breads for over an hour extra trying to get it to set, but the almond flour is like adding oil
