Thanks alot, now I'm starving!!!! I am going to make these immedietly! Thank you so for the recipe. These silly emoticons make me a 10 year old girl again. My daughter and her friends talked me into subrscribing to a website that makes them for 6 months.. They use them on their middle school website, as they keep a running blog up and make daily entries. I'm just as bad as them giggling away at looking for certain emotions. lol...Where do you find these hilarious emoticons! We are actually under a tornado watch.
Lemon Shortbread recipe:
1 cup butter, softened
1/2 cup sugar
2 egg yolks
3 tbsp lemon peel
1 tbsp fresh lemon juice
1/4 tsp salt
2 1/2 cups flour
Beat together butter and sugar. Mix in egg, lemon peel, lemon juice, and salt. Mix in 1/2 off the flour, then the other half. Squish dough together into a big ball. Roll into 1 inch balls, flatten with palm, place on cookie sheet. Bake at 350 for 20 minutes.
I also like to make an indention in each cookie with my thumb, and fill it with a drop of fresh preserves before baking. I filled this batch with grapefruit marmalade.

Excellent Idea! I have been miserly myself lately, heating oil bills K I L L I N G M E. If it was just me, I would live with it way low, but hubby and children act like I am abusing them if it goes lower than 63. Today here in Upstate NY, it is actually warm. My highlight of the day is I was able to clear up all the frozen manure from the dumpster I am using at the moment that was hindering me from dumping it easily. Boy did I wreak of Manure when I came in the house afterward. Up to aAs yes! I remember now. And the name makes total sense.
Oh yes, Please continue to rub in your beautiful tropical weather. Who wants to be warm anyway? MB and I are perfectly content with our snow-wind-ice, right? Our chickens love it too.
Is it April yet? I already feel like it's been winter forever. On a plus note, I figured out a pretty cool trick last night...preheated pajamas! I tuck my PJs into my electric blanket an hour before bedtime! No more huddling in bed waiting for it to get warm. Now I can fall asleep instantly! Our house is heated with a wood stove, and our bedroom isn't heated at all. I'm too stingy to turn on a space heater.
That should be fine. The lemon doesn't taste that strong anyway. You could also probably sub a tsp of vanilla extract for the lemon juice. Add the preserves before baking...not too much or it'll bubble over the side of the cookies. I think I add about 1/2 tsp.
