I love wild duck.
You have to remember that wild duck is very lean, so cooking wild duck is nothing like cooking domestic duck. Lean meat dries out really easily and if it dries out, it gets tough.
If you manage to get your hands on a wild duck, try this:
Clean the bird up and remove any shot. Place 1/2 and apple and 1/2 an onion in the body cavity. Roast until medium rare. You want the meat to be still pink. Then baste with a mixture of 1/2 red currant jelly and 1/2 orange juice and cook until the glaze is just set.
Remove it fro the oven and let it rest for a few minutes so the juices don't all run out when you cut it. The apple and onion, you can throw away.
