Anybody Having Quail Today

Nope! But, the vegetarian lasagna is assembled and sitting in my (cold!) garage awaiting the oven (& 3 smaller lasagnas have been put in the freezer for later). The cheesecake is in the oven for this evening. Yeast bread is on its 2nd of 3 raisings & the Naan my son is making (his request) is raising, as well. Salad is made but I need to whip up some salad dressing.

Didn't have'em today, but a big family get together this Saturday will remove 24 from the freezer. Our go-to recipe is:

• Season birds with salt, black pepper, and poultry seasoning.
• Roll in flour thoroughly.
• Fry in skillet with oil of choice until lightly golden brown.
• Place birds on paper towels to soak up grease.
• Place birds in glass baking dish (with lid) adding water to about ¼” – 3/8” deep (varies per preference after experience)…….and place lid on dish.
• Place in oven at 250º for about 1-1/2 hours.
• When birds are ready to remove from oven, having saved enough drippings and oil from frying, make “LOTS” of brown gravy, make plenty …….and make it thin, and gravy has a tendency to thicken quickly as you probably know.
• Pour gravy over birds.
• Get ready to over-indulge!

Baking (steaming) them in the glassware dish makes them all but fall off the bone.

Homemade biscuits, rice, and english peas .... along with some good ol' sweet tea............and you're gonna want to do this often.

I've sold quite a few birds (dressed) in the past couple of months, and always offer this recipe to the buyer. Surprisingly, everyone follows it, and vows it can't be beat. I know it's a hit at this house.

Hi,
We had quail today and it was great - fall off the bone tender. I salt and peppered them and placed them in a Dutch oven - then sprinkled a pkg. of onion soup mix over it. I then placed about 5 pieces of bacon over them - covered pan and roasted in a 250 degree oven for about 4 hours. Yum yum.
