Trying to decifer USDA rules from Texas State rules.
USDA allows 1000 birds to be slaughtered and sold by a small farmer without inspection and minimum hoops to jump through, but I can't find out if Texas also honors this since their rule regarding the second exemptions, 20,000 birds for USDA and only 10,000 for Texas, I think.
We want so badly to be able to do this from our farm and sell in farmer's markets and other places but can hardly afford the $25,000-60,000 I've heard batted around to build a facility for full certfication.
Is anyone here in Texas doing this and if so can you clarify the rules for me or tell me how you beat these incredible costs of starting such a facility?
