I have a new thing I am doing for breakfast w/ my V8 I thought I would share. I hate fixing breakfast, and don't much like eating it either, but this is so easy and reasonably healthy. I make 1 dozen at a time.
spray muffin tin w/ pam
line each tin w/ 2 slices ham (sandwich deli ham)
in bowl mix 18 egg whites, chopped fine veggies of your choosing (tomato, squash best if shredded, onions, peppers, spinach what ever you like or is in season)
pepper flakes to taste, garlic powder, whatever seasonings you like (mrs dash or whatever)
1/4 - 1/3 cup of a strong cheese (sharp chedder, asiago, feta, smoked, pepper jack etc) by using a strong flavored cheese you can use less and still have the great taste.
mix/beat all egg, seasonings, cheese together then pour into lined muffin tins, bake at 350 for 20 minutes, or until eggs are cooked. They are easy to heat up in the microwave 30 seconds, and you can eat it on your way out the door. I freeze them and take one out at night before I go to bed and pop it in the micro in the am. No bread or carbs, a plus for me b/c no gluten.
