Anyone ready to ring in the new year...and lose weight/get fit?

I have a new thing I am doing for breakfast w/ my V8 I thought I would share. I hate fixing breakfast, and don't much like eating it either, but this is so easy and reasonably healthy. I make 1 dozen at a time.

spray muffin tin w/ pam
line each tin w/ 2 slices ham (sandwich deli ham)
in bowl mix 18 egg whites, chopped fine veggies of your choosing (tomato, squash best if shredded, onions, peppers, spinach what ever you like or is in season)
pepper flakes to taste, garlic powder, whatever seasonings you like (mrs dash or whatever)
1/4 - 1/3 cup of a strong cheese (sharp chedder, asiago, feta, smoked, pepper jack etc) by using a strong flavored cheese you can use less and still have the great taste.
mix/beat all egg, seasonings, cheese together then pour into lined muffin tins, bake at 350 for 20 minutes, or until eggs are cooked. They are easy to heat up in the microwave 30 seconds, and you can eat it on your way out the door. I freeze them and take one out at night before I go to bed and pop it in the micro in the am. No bread or carbs, a plus for me b/c no gluten.
 
I suppose that might help me get my metabolism going again. I got on the scale this morning with no change..AGAIN! I have been more active and walking a mile at a time. I am not back to where I was before the lung infection, but... SOMETHING should move! It occurred to me that it might be that my body geared way down when I was so sick, that is why I gained all of my weight back.
Breakfast is the most difficult meal for me to eat. I am not hungry, I get nauseous just thinking about food in the morning...Plus, most breakfast foods are wheat based. Nothing easy and quick.

So. Tomorrow morning we make your little egg pies, and get my body burning calories again.
all I get from my low calorie diet and exercise is an overwhelming need for a nap.

And I can scramble the yolks and add to the new dog's food for some extra calories.
 
my ham disappeared. It became husband's lunch this morning. so I used the papers that you put cup cakes in.
The egg pies are really pretty. I had visited the garden last night and picked some baby squash and some spinach, so I chopped them up and put them in with some sweet onion. My cheese was mild monterey jack, but yummy any way. (the cheddar is apparently with the ham.)
I had eggs with my coffee this morning, so we will see if I still crash at 2pm today.
This fatigue is killing me. i have to break out of it.
 
Tomorrow I am having a blood draw for my insurance. Once a year they take our blood and perform all kinds of tests and give up a booklet w/ all our info about bloodwork, weight, cholesterol, liver, kidney's etc..... It will be interesting to see if the 18 lbs makes a difference. I won't have the results for a few weeks though.
 
I hope its the best news Kass! I hate getting blood drawn... kills me!

Weigh in today is again no different, and I worked my tushy off all week getting the garden going.

I think our 'new' work schedule is whats killing me. 8 is late to eat. and I find I eat it while I am cooking because it is way past time to eat.
But I did have three large carrots to tide me over.
I hate not having the scale move for so long. At least it isn't going up any more.

My son took a picture of me and I was appalled at how swollen I look.
Sometimes that is all it takes to get back on the breakfast resolve.

Oh, and by the way, the egg sticks to the cupcake papers, so next time I will hide the ham slices.

Today isn't my weigh in day, but I weighed anyway b/c I had the opportunity this morning and I was

b/c I have lost 2 lbs, plus lost the 1.5 or so I gained from the Ben and Jerry's splurge. But it won't be official until I weigh monday.
 
Today had the potential to go horribly wrong w/ my eating, I am at work and didn't bring any food. Usually only time for fast food at work. My lunch choice was McD's a garden salad, grilled chicken breast and yogourt parfiat. Supper was a can of tuna, can of asparagus (don't usually do canned veggies, but the food choices at Dollar store is limited) and I brought some lettuce and cukes from home. Oh and breakfast was a yogourt. No Diet Dew yet either, just water, but I am behind on my 60 ozs for today. so far snacks have been one medium apple and small hand ful of almonds.
