The A/C guy said thermostats for A/C units (like the ones on the wall of your hallway) are pretty general. I know that even the best ones in my last house weren't that accurate, and took rather a long time to kick off even if you turned the system off.
The ones for store-bought incubators are supposed to hold a temperature within .5 degrees. The digital ones are very, very accurate.
