The A/C guy said thermostats for A/C units (like the ones on the wall of your hallway) are pretty general. I know that even the best ones in my last house weren't that accurate, and took rather a long time to kick off even if you turned the system off.

The ones for store-bought incubators are supposed to hold a temperature within .5 degrees. The digital ones are very, very accurate.

Yes, once you get them set, they keep very accurate temperatures--becasue of that accuracy, it can be more difficult to set them: a teeny adjustment can change the setting a LOT. THe digital ones, where you literally dial in the temperature are much nicer, and much more pricey.

Once set they fluctuate more than .5 degrees? Pretty much all the incubators that I have read the specs on say they will keep the temperature within a half degree. Mine is a GQF Sportsman, but even the Lyon Turn-X incubators that a preschool used to have for hatching eggs I provided was accurate once set (setting, though was a nightmare). The Lyons are, IMO, a huge waste of $$$.

Now if the environment varies greatly (such as having your incubator outside or in a drafty location), that will affect the incubator temperature, which will make it difficult for the thermostat to keep up.
