Hmm...that sounds horrible.I can't really speak for now. But in the past, one processor who self proclaimed to be the state leader, was showing their processing plant off to AQIS and industry when the government was amending legislation and they displayed appalling handling techniques and were proud of it. The scary part was they did not recognise how bad they were and they were acting inside their states requirements. In fairness to them the state requirements differed to other states - ie at that time they were permitted to process in that way.

So they where not necessarily killing the roos poorly, juts keeping, shipping and string the bodies and meat.
With the movement of humans it was clear that roos would take over, as you said before they only had 1 natural predator and as soon as you destroy dingos the whole food system falls.
