Banana Pancakes - Yum

A while back I was looking through all the recipes on BYC. I decided to cut and paste the ones that looked interesting. I tried these today and they were heavenly!

I can't find the original post but thank you to whoever posted it. It is now our all-time favorite pancakes.

I didn't add oil or drippings to the pancakes and just greased the pancake as I usually do. They were SOOO good with just a touch of butter and syrup - not much of either needed. I didn't go with the strawberries and whipped cream but that would really put them over the top. YUM YUM YUM. Enjoy!


Banana Pancakes
Looking at a couple of bananas quickly going over the hill I decided today was banana pancake day... I cooked up a batch of 14 breakfast sausages and once the fat had cooled I added it to the batter... Enjoy.

1 cup all purpose flour
1/2 cup oats (pureed in a blender)
1 tsp salt
2 Tbls white sugar
1 tsp baking soda
1 tsp baking powder
grating of nutmeg
1/2 tsp cinnamon
pinch of ground clove (or grate a clove)

2 cups milk
1 banana (very ripe)

2 eggs
1/4 cup corn oil
1 tsp vanilla extract
1/4 cup cooled drippings from breakfast sausages (or bacon fat)
2 ripe bananas cut in half lengthwise then in thin slices

Strawberry slices
Whipped Cream
Maple Syrup


Combine dry ingredients in a medium mixing bowl. Now add the one very ripe banana and milk into the blender and mix on high about 30 seconds. Now add eggs and mix about 20 seconds on high. Add blender mixture to dry ingredients, add corn oil, sausage drippings, vanilla extract and cut up banana slices and mix well. Let stand 10 minutes. Heat pan, using 4 ounce ladle stir mixture well, then make two pancakes from each ladle full. Cook on medium heat about 2 minutes until you see all your batter bubble and the bubbles all break. Flip carefully and cook another 2 minutes. Remove to warm plate. Repeat until all are cooked off.

Serve 3 to a plate, dust with powdered sugar and garnish with strawberry slices, whipped cream and a good maple syrup... Wonderful...
