best fried eggs anyone can ask for!! (seasoned cast iron pan)!!!

The Absolute BEST Eggs.. are when you are camping, and you wake up to the smell of bacon and eggs made on a flat griddle over a camp fire, with coffee.. and it has to be COLD out side!!!

Teflon scares the crap out of me, especially since I learned about oh...15 years ago or so that overheating one accidentally will kill pet birds. And how about Teflon flu??? http://en.wikipedia.org/wiki/Polymer_fume_fever

anyway, oh my goodness, I LOVE my cast iron. I have found a lot of cast iron in the trash (!!!)..well, I mean other people's trash,and I have rescued them. As long as they aren't pitted or cracked, they will clean up beautifully. You can use a wire brush to get rid of the rust and then season them.

The only thing about doing scrambled eggs in cast iron is that they do stick pretty badly. Even in my grandmother's 60+ year old pan, they still stick a little. BUT I just put a little water in there, set it on the stove until it's boiling and then scrape it off with a metal turner.
