Hello 12 year old post and the times have certainly changed. 
It is now easy to find a quality, sensitive to a tenth of a degree f° plug-in thermostat that you can easily monitor and adjust from your phone, or use voice (Alexa , google, app) to control/ set.
This particular B-N link WiFi model was bought after shopping around for under $40. and has performed flawlessly in an incubater to control unwanted temperature variations that these newfangled, store bought digital Styrofoam cooler Type incubators are now infamous for.
Wafer sensors are reliable as the day is long and regret moving away from them into the space-age, if you will.
Ohwell, these will make up for many sins that these lie-ing to you that these foam incubaters alleged temperature regulators flash at you.
Govee WiFi thermometer/hydrometer units are affordable and quite accurate to help confirm your out of sync temperature variation suspicions.
