BettyR - your Grandmother's Banana Bread ROCKS!

I love nuts in almost any cake or dessert, but at the price of both pecans and walnuts, baking had slowwwwwwwwwwwed way down in our house. So the other day DH has to have nuts to snack on so since I had his can of mixed nuts from Dollar General , I took a large handful and chopped them and used them in place of the pecans. works GREAT. So now I keep a can of dollar generals mixed nuts just to cook with, after cooking no body knows just what kind of nuts they are any way, I think the can i bought was about $2.00 and a handful chopped gave me all the nuts I needed for the recipe for my sour cream cake, marrie
 
I will be using red bananas that have been ripening all week. I was planning to make banana nut muffins for breakfast when my mommma gets here.

I am a pecan girl. Straight from Ga and lived in a small pecan orchard. I can't begin to tell you how much I miss my annual harvest of pecans.

red bananas are delish! they are available periodically at our local grocery. muffins....the world would be wrong!

i would stick with the recipe as written. AP flour is excellent for quick breads.

the gluten in the bread flour will give the bread too light of a texture. quick breads are supposed to be dense and moist.

if bread flour is all that is available, just realize that your banana bread will be a little light and may be a little drier. (like that would stop anyone from eating it though...

Red bananas?! We're lucky if we can even get yellow ones. Apparently Tucumcari NM isn't the culinary capital of the world, and the one grocery store is testament to that fact. The challenge is finding produce that isn't already bad, and is still good the following day.
