Well good timing to have made the dough, overnight temps dropped, hasn't been this cool since Spring, got the furnace on for the first time since early May... Made use of this prime angus filet mignon (roasted on a bed of vegetables) while I was baking a batch of the brioches. Love them once they have cooled and the pockets of cubed cheese that exploded inside during baking firm back up.

Yeah we were waiting on payday and lo and behold there was that prime filet (Sam's Club had 4-5 packs marked down after the 4th of July, man they were GOOOOOOD...) I was pleasantly surprised to see that bad boy staring back at me. I just season them with a homemade rub and smear on some EVO and roasted it on a bed of cut of vegetables (the french call that a "raft" elevating it off the pan, my wife loves to eat the roasted veggies). Now you guys got me jonesing for some of these...

My Homemade rub for red meat

1 Tsp corriander
1 Tsp cumin
1 Tsp black pepper corns
1 Tsp celery salt
1 Tbls Herbs de Provence

1 Tsp white sugar
1/2 Tsp Red Pepper Flake

1 Tsp espresso coffee beans

Take first group of ingredients and toast in a small cast iron skillet on the stove. Remove from heat once they become fragrant and place in an old spice mill or gnarly old Braun coffee grinder you keep around for making curry. Place remaining ingredients in the spice mill, cover and grind about 40 seconds, shaking the doggone thing real good while doing so. Place in a small jar and seal, keep around for when you need a dash of something to jazz up some pork chops, chicken thighs or lamb...
