Cornbread, cooked in a cast iron skillet. Eat with greens, beans, chili and stews. Biscuits, for breakfast, with butter and jelly or sausage gravy... Great, now Im hungry...
The number one thing I eat cornbread with...pink eyed purple hulled peas! Then pinto beans, chili, bean soup, etc. etc. Not sweet! If I wanted cake, I would eat cake! Cooked in my grandmother's black iron skillet! That's what I'm talkin about!
Fry the bacon in the cast iron skillet, add the bacon and most of the fat to the cornbread, with some green chilies, cheese and cilantro and put the batter in the hot oil in the skillet to get a nice bacony crust on the cornbread. Serve with chili or collard greens cooked with ham, or ham bean soup.
