As per blowing the eggs we have a strange system down. My husband found a little tool, looks like a drill bit but with a very sharp point. I'll ask him what it is called. We put a tiny pencil mark on the center of the top and bottom (we were sometimes quite a bit off center!) THen tap at the mark with this little tool. (I've also just used a steak knife, same effect just not as sharp a point) After about 5 small taps it makes a chip and you just keep tapping until it is big enough. Usually still quite small. Then we straightened out a paperclip and put it in to mix the yolk. Then take a bendy straw, put the long side in your mouth, the short side on the egg and blow. Takes maybe 4 minutes? I don't know. I think fresher eggs are easier but that may be because they were room temp, I didn't think of that. Then take it to the sink. Wash it off. Cover the bottom hole with your finger and fill the egg with some water. Cover the top hole and shake. Then I just put my mouth on the top and blow until the water is clear. I fill it with water 3 or 4 times. Seems to work although I am sure there are better ways!
