Wish my DH could cook!! You're doing a great thing for your kids, good for you!!! What about muffins? Lots of varieties and a grab and go or could be an addition to whatever else you plan on making. I love grits, could have those daily.
Kids are picky and she sounds a little more so than my kids, what about fresh fruit cut up into a fruit salad?
 
Stuffed French Toast for a change:
spread some cream cheese on one slice of bread, jam on the other (more toward the middle than all over)
put both slices together with cheese/jam in the middle
dunk in your beaten eggs, milk, a little sugar, a little vanilla, dash salt mixture
dip in a big bowl of crushed cereal
brown in skillet in butter
serve with syrup, whipped cream, cool whip, other toppings of your choice

Farmer's Breakfast
cooked cubed potatoes
s&p
chopped onion and bell peppers if she will eat them
diced deli ham
eggs scrambled and cooked with all the rest
grated cheese over the top to let it melt before serving

Biscuits and Sausage Gravy

Crepes served with jam spread over, rolled up and sprinkled with powdered sugar

Campbell's tomato soup and cheese toast
 
I know you said yogurt had been overdone, but lately I've been making smoothies with it and they are GoooooD!

For one serving:
in a blender toss some cut up fruit - fresh, frozen or canned in light or no syrup - add 1 cup plain yogurt, a couple tablespoons wheat germ, a drizzle of honey & a couple ice cubes. Blend until smooth.
You can also put in some rolled oats for more fiber.

So far I've used strawberries (fresh), blueberries (frozen), mango (frozen), banana (fresh), apricot & peach (canned)
 
If you have a rice cooker or slow cooker, this can cook overnight:

Breakfast rice

1 c. short grain rice
1 1/2 c. apple cider
1 1/2 c. milk
1/2 c. brown sugar
1 tbsp. cinnamon
1/2 c. golden raisins
1/2 tsp. salt

Mix it all up, put in rice cooker or slow cooker overnight.
 
I put hash browns (thawed) in a casserole dish, beat up several eggs, S & P, a little milk then toss in cooked sausage or bacon and shredded cheese. Pour over the potatoes, let set overnight and bake at 350 for about 30 min. give or take a few minutes. YUMMY!! You can add veggies if you would want too. Quiche is good too, and you can really dress it up or down!!!

Our family had a huge asparagus patch growing up. We often had asparagus with eggs, etc for breakfast. And here I thought no one else did that!

Does she like tomatoes? We eat sliced tomatoes or cherry tomatoes as a side to eggs dishes. We also like salsa with omlettes or scrambled eggs.

If your DD likes mushroom omlettes and bisuits with gravy....then she might like our favorite mushroom sauce over something, toast or biscuit for example:

Not sure what 'European breakfasts' are. But if they're not quiche, tart, frittata or strata, you might try those. I've got several recipes posted here, all personal favorites:

How about homemade muffins? Lots of options there - sweet/fruit types, but savory ones too with bacon or sausage added.

Quick breads? Like banana bread, zucchini bread,etc. We used to operate a small bed and breakfast, they were always a hit as a side dish, serve with cream cheese or fresh butter.

Crepes? Again these can be sweet (like peach, apple or banana) or savory (chicken).
