To be fair, adolescent cockerels or older roosters are much harder to butcher than 6-8 week old meat birds. Their connective tissue is much stronger and tougher in my experience and it takes me much longer to process them as a result, especially if you want a whole bird rather than jointed.I wish I lived closer. Your cheap. I had 3 roosters butchered here last spring and they charged me $8.00 for each.
