It's more used for seasoning than a main dish. I use it mostly for gumbo and red beans and rice. It adds a layer of flavor you don't get with plain ham. I gotcha, boi! I go back home couple times a year and come back with a big cooler full. Used to go down to Leesville to the shrimp docks and get it right off the boats. I like to grill redfish filets and then top it w/ shrimp or crawfish etouffee. Dats jus stupid good,yeah!Love me some shrimp etouffee, too!
