Not quite ready to open the restaurant yet but getting closer every day. Once the all clear is given that the water is ok (it has to be tested every year before we can use it), then it's full steam ahead with all the prep work making everything from sauces, to side dishes, to smoking the meat. Hopefully, we'll be ready to open this coming Tuesday.

Hey Meg, come on down and have lunch some time, my treat!
Any chance of mailing me some of your cooking?:p

Oh my gosh, I'd love to! If I ever make it to Wyoming you'll be the first to know! You had me at "smoking the meat" haha. I'll bet everything is delicious. :drool

Do they test the water because it's public?

Do they test the water because it's public?

The golf course & restaurant only has a 6-month water permit (mid-April to mid-October). Because it's been shut off for 6 months the health department requires it to be tested by a lab and approved safe for human consumption (which includes dishwashing, the hand sinks in the bathrooms, etc.).

I follow the health department guidelines by the book...no way would I want to put our ability to operate or our reputation at risk by running afoul of the H.D. Sometimes their rules seem a bit excessive (like when we had made our sterilizing solution for cleaning the restaurant table too strong...we had to dial it back in case some kid licked the table :lau ). But mostly I agree with what they want. I know I want to feel safe eating at public places!

The last time I went to the USA I didn't get further than Boston.
 
Well, goll darn! Still no crown on this tooth, he decided a root canal was in order because the root was infected. I could tell it wasn't right cause it was too sore. Gotta go back next Wednesday for the crown and couple little things besides. :barnie
You need a set like mine. I just pop them in the post and they come back fixed.:lau
