I have a recipe for a frosting that is like this one but does not get hard

Fluffy White Frosting

1C White sugar
1\3 C water
1\4 tsp cream of tartar
2 Egg Whites
1 tsp vanilla

In a large saucepan, stir together sugar water and cream of tartar. Cook over medium high heat until the sugar dissolves and mix is bubbly. Set aside to cool.

In a medium mixing bowl, whip the egg whites and vanilla to soft peaks using a mixer. Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes. Frost the cake of your choice.
so that one's really going for incorporation of air - interesting! and adds vanilla, where royal adds lemon juice. What does the cream of tartar do?
 
Good morning Cafe. Coffee is ready... I've dragged out the big boy. I expect we on the east coast are going to need to caffeine infuse throughout the day.
We are now in the band expecting 9-16" of snow. Starting at 1:00. I'm not sticking around work after it starts.
I posted this picture trying to make a point on another thread but didn't notice who's in the heated water bowl. I'll be locking the birds up in the coop/run for the next several weeks because I don't like letting them out to wander just outside the door to the pen in the snow without easy access to the chicken bush so the fluffy little tree rat will have to forage for his own damn food.
