We used to pick them and sell them when I was growing up up further North in California
My parents used to collect gunney sacks full of black walnuts. They'd wait until the green skins turned black, then dad would drive over the sacks with his car a few times. The green skins would come off and the walnuts crack open (at least, that was the plan). It was our job (bro, sis & me) to pick the nuts out. We'd have contests to see who could pick the most.
Let me tell you, black walnuts are hard to pick out! But Mom could sure make the best fudge and baked goods out of those things.
