Back in the 60's I was a baker. Now that's been a long while but it seems to me long johns were made from donut dough and eclairs were made from a pastry like dough.

You're 100% right Pert. Things like eclairs are made from pate a choux which is made with flour, water, eggs and milk and it's cooked first on the stove top. You can pipe it into different shapes, bake it in the oven and it puffs up so it can be filled.

Good morning everyone. Baby thing woke me up at 5 with a fever, teething, I forced some Advil down him and everyone is settling down, but no more sleep.

Thanks for starting the coffee! Sorry to hear about the baby teething, those aren't fun times for anyone. I used to use Ambisol to deaden the gums and cold chewy toys for the boys when they went through that.

Ah, the internet; place of many wonders, where you can learn so many things you never knew. For example, I just learned that Donny Osmond just sounds silly when sped up, but a sped up Dwayne Johnson sounds just like Todd Haberkorn (a voice actor who had done dozens of English-language anime dubs). Bizarre.
 
I don't think eclairs have boston cream in them - looks similiar but tastes different?
The eclair is a log shaped choux pastry. This is the same pastry dough that is used for cream puffs. The filling is a pastry cream and it can be coffee, chocolate or vanilla flavored. The glaze can be different too. Dark chocolate seems to be what I usually see here.

We have made them before along with cream puffs. They are so good! A real pastry cream is a lot better than vanilla pudding. Boston cream pie is usually an sponge cake with pudding between layers. It is topped with a chocolate glaze too. The glaze is the same but the filling and cake or choux pastry is different. Eclairs you have to eat within a day. Boston cream pie keeps longer.

Good afternoon everyone.
Stayed up until 3:30am tending to the fire... slept until 11.
Warming up a bit! High of -22 today. -18 tomorrow. -5 on Tuesday! Yippee! The end is in sight!!

Got another big problem. It's been so cold that our porta potty split. It's in a room to the side of the house tied to our closed in porch. The porch totally reeks. Gotta find a 5 gallon bucket today. Then we've got to cut up the porta potty to get it out. Ick & ewww.
