They raised beefalo on a lot of the ranches in the Northern part of Florida. It was grass fed, no hormones added. People would order their meats, and twice a year they would bring in a refrigerated semi tractor load. The people that had ordered would get a notice when, to go pick up their meats (usually on Friday). The trailer stayed an extra 2 days, and anyone else wanting beefalo could buy it then. They always parked in the same spot. The thing was, most people around our area had not tasted beefalo, and were unsure about it.
The first time mom got some various cuts of meat, and ground beef too. It was all tender, and had a great flavor. Yes, it's leaner than the beef sold in stores, but not nearly as lean as venison. The ground beef had just enough fat to fry a burger. After that first time, mom ordered hers ahead of time, and enough to put in the freezer to last until the next time they were coming. After about 4 years, they got enough people ordering, they'd bring a couple trailer loads, and within a few hours, have it all sold, and leave.
