speaking of baking (i am SO hungry after catching up on this thread from this morning), i have a baking question -- as i have several favorite recipes that all for only egg yolks, i've been saving up the spare whites in the freezer -- and recently decided it was time to try making my first-ever angel food cake. and it worked out great -- used up my 12 frozen egg whites, and turned out perfectly -- except i found the recipe to be way too sweet for me. anyone have an angel food recipe that's not insanely sweet? (this one had two cups of sugar, one confectioners and one granulated...)

i'm working on learning more egg-heavy recipes!
Angel food cake is pretty much just egg white, sugar, flour and air, LOL. You could probably get away with just cutting back a little on the sugar in any recipe. Just don't change the amount of flour or you'll destroy the structure.

Try pound cake and custard or flan.............my go to's for using up eggs.

Hi Pam:

What is the "special" fertilizer? Do you do anything special to it or just compost?

Since you seem to love Polish, I thought you might be an expert on identifying rooster and hens at about 6-7 weeks old? I have 3 and I am afraid they may all be boys, but I can't tell for sure?

I will try to get some face pictures and leg pictures but I only have these two of the tops of them in my phone right now. I was trying to see if their crest feathers were becoming pointier and does the development of their tails give anything away?

Anyone else that see's anything feel free to provide your opinion too!

I'd say both of the Polish are pullets. Boys have spiky hair dos at this age, girls have a nice round bonnet. I would expect orange saddle feathers to start emerging from the black one at this age if it is a boy, and I don't see any in this photo. To check: spread the feathers on the back just above the tail and if you do not see thin shinny gold feathers growing it.... its a girl.

The Crele laced (coming down the ramp) is also a girl. The lacing will get really nice by the time she is 5-6 months old so hang in there. The Crele Laced birds start out look Mille Fleurish and the lacing gets nicer as they grow.

Okay, I have new eggs to incubate. I just cleaned out my crested gecko cage and found a dozen eggs in their hide box (haven't cleaned it in awhile

).

Nine eggs are obviously old, but three look viable!

thanks, i'll try that, and/or Ron's recipe -- while i had so many girls broody, i actually haven't had *enough* eggs (to keep up with my own use + several swaps with people from school), so this was just an attempt to use up the egg whites (the yolks were mostly used to make avgolemono, my favorite soup of all time...)

So I just put Blue Kote on the chick that was being picked on... how do I make my fingers not be purple?!

So I found my first bad egg in the incubator today. One of the new OE eggs I put in on Saturday night. Can eggs really go bad that fast? I didn't see any cracks in it when I put them in. Last night I noticed it was looking funny when I candled it. I looked at it again when I got home from work and decided to take it out. When I went to break it open and have a look it make a loud popping noise. And it smelled - even from inside a sealed bag.

Time...................we didn't warn you about BluKote? LOL

Literally, it needs to wear off.

Spray your whole hand to the wrist and start a fad. Do both hands and say you're wearing gloves...................

Ewww, ewww, ewww, that was NOT a new egg. They don't go bad that fast.

Ok I am freaked out! I went in to check my broody and I have her sitting on 15 blue eggs. 2 eggs were moved 2 boxes away. How in the world did she move them over there? Without breaking them. The boxes are in a line enclosed. How could she pick them up? Not with her beak or her feet right? Lol I am at a loss but they were moved somehow
Under their wings. Put them back under her.
Quote: Or lemon curd - great way to use up yolks. Congrats on all your wins Deb!
